This would be done in the Forms Configuration Editor - for each form you wish to change, click on Modify Module Settings, and then change the gatekeeper to who you want it to be.  Now, click on the Save button.

If the gatekeeper you want is not listed, you will need to create them in the Setup Console Users and Passwords under Account Settings.
